when we were little, my mother always made us rafaello, we ate until we felt sick: D

  • a packet of butter (200 g)
  • 200 g sugar
  • 200 g milk powder
  • 200 g coconut
  • vanilla essence
  • the juice of an orange
  • peanuts

METHOD OF PREPARING THE RECIPE Rafaello:

Put the butter in a melting pot, then add the sugar and leave them until the sugar melts.

After the sugar has melted, add the powdered milk, 150 g of coconut, the essence and the orange juice and put it on the fire again for a few minutes, chewing continuously.

Let the composition form until it cools well.

After it has cooled, we form balls, and in their middle we put a hazelnut, after which we pass it through the coconut.

Separate the egg whites from the yolks, and then beat the hard foam together with the added sugar little by little. Mix the flour with the coconut flakes and gradually add them to the egg white mixture. Stir until smooth.

Pour the dough into a tray lined with baking paper and place in the preheated oven at about 160-170 degrees for 20 minutes. Bake the dough at 180 degrees for the first 10 minutes, and then gradually reduce the temperature. Try the dough! If it doesn't stick to the tray anymore, it means it's baked!

How to prepare cream:

Heat the milk together with the yolks, then add the pudding powder mixed with the sugar and a few tablespoons of milk. Stir until thickened (be careful not to stick). Remove from the heat and leave for a few minutes, then add the butter previously mixed with the sugar, and stir continuously until the butter is completely incorporated into the cream.

Spread the cream in an even layer on the entire surface of the countertop and sprinkle coconut over it. Put it in the fridge for a few hours, portion it into smaller pieces to reach the whole family, and then you can serve it with great pleasure!

Put the coconut milk in a bowl, add the powdered sugar and vanilla sugar and mix gently with a fork. Add over the coconut and almond flakes. Mix gently again with a fork. Then form balls of this composition. Sprinkle coconut flakes on a flat plate, through which you give the coconut balls.

If you can resist the temptation to eat them all at once, you should know that they are kept in the refrigerator, in an airtight box.


For this delicious coconut cake that I fell in love with, we start by preparing the white chocolate ganache. Use a quality white chocolate, I use the one from Lidl. Put the broken chocolate in pieces together with the liquid cream in a pot, over low heat, stirring constantly until the chocolate melts.

ATTENTION: The mixture must not boil, otherwise the cream will not harden.

Thus formed, the cream is left to cool, mixing from time to time, as it cools, to become airy and fluffy.

Separate the eggs, mix the yolks with half the sugar, milk and oil. Optionally you can use coconut milk.
Whisk the egg whites with the remaining sugar, mix with the yolks and finally with the flour mixed with baking powder. Pour the mixture into a 23x23cm tray and bake at 180 degrees for 20-25 minutes.

Beat the egg whites with the sugar until the foam is hard and shiny, like meringue. Add the coconut flakes, flour mixed with baking powder (both sieved) and almond essence. Mix lightly with a spatula, from bottom to top, pour the composition into the tray lined with baking paper and bake at 160 degrees for about 20-25 minutes, it should be golden.

The base is the first countertop that you can syrup with some burnt sugar syrup flavored with some rum or coconut liqueur, then put half of the cream, then the second countertop, then the rest of the cream and sprinkle with coconut flakes. Raffaello cake is refrigerated for 2 hours.

Unfortunately, I then faced two problems: 1) the composition did not bind and 2) they were very dry and drowning. This is not the case with this recipe. The balls form easily and are creamy. Even after 4 days, the consistency is the same.

To prepare this recipe you need only 4 ingredients, 2 of which are coconut-based: coconut cream (I used the one in the link) and coconut flakes. This coconut cream (or coconut cream) contains 100% coconut, is organic and is very fine. Coconut milk can also be made from it if it is combined with water. Then comes the sweetener. I used raw honey, ie cold extracted, but if you want it to be a vegan product you can replace it with agave syrup or maple syrup. And, the fourth ingredient, orange juice.

Amy Myers, in her book "Solutions against autoimmunity" strongly supports the consumption of coconut, claiming that it reduces inflammation and stimulates the immune system. Coconuts bring many necessary nutrients: selenium, iron, copper, magnesium, calcium, phosphorus, potassium, zinc, more B vitamins, vitamin C, vitamin E.

Speaking of my mother, do you still know how I was deceiving you with something like this, is this really true Raffaello? now, more than 10 years away, I really think it looks a lot like the real recipe!

For Raffaello we need:
& # 8211 150g vanilla powdered sugar
& # 8211 200g milk powder
& # 8211 200g coconut
& # 8211 the butter board
& # 8211 2 wafer sheets with vanilla
& # 8211 100g whole almonds

That being said, mix the butter with the powdered sugar until you get a foam, add the powdered milk, coconut and the 2 finely chopped wafer sheets. As for the wafer sheets, I prefer the waffle sheets. from Vel Pitar, which are fine and very crumbly, perfect for what we need. We get a paste that we keep for 30 minutes on the grill. I have tried several Raffaello candy recipes in the past. The one with mascarpone did not look at all like the original, the balls being soft, moist and too creamy. The one with condensed milk seemed heavy, slightly nauseous, extremely sweet, or butter rubbed with sugar, especially if it's made cold, it seemed to me the worst option of all. So is the one with melted white chocolate, which is extremely sweet. If we added pieces of broken wafer in the composition, they just softened, became rubberized and led to the disintegration of Raffaello balls.

About the filling: I decided to go for the original version, that is, whole almonds scalded and peeled from the brown skin. For 2 minutes of work it is not worth putting the peeled almonds.

From my previous experiments, my recipe was born, which, of all the variants, I like the most. I went for the idea homemade chocolate with milk powder, that stick loved since childhood.
