Meatball soup


  • 200 g of beef
  • 200 g chicken / turkey meat
  • 1 tablespoon grated rice
  • 1 teaspoon flour
  • 3 carrots
  • 1 large onion
  • 1 celery
  • 1 patrol
  • 2 small potatoes
  • 1 glass of tomato juice

RECIPE PREPARATION Meatball soup:

We clean the vegetables and chop them, then heat them a little. We put the meat through the mincer then we mix it with the egg white, rice, a little salt, pepper, flour and finely chopped parsley. Put in a pot to boil water, about 2 l and add the hardened vegetables to boil. Meanwhile, we make the minced meatballs: we take the meat paste obtained and round it between the palms. We also put them to boil. When the meatballs are cooked, add the tomato juice (if we don't have tomato juice, we can add diluted tomato paste) and let it boil for 5 minutes. Then add the borscht and let it boil for another 5 minutes. At this point, "straighten" the soup with a yolk and add the green larch. To straighten the soup, beat the yolk with a little water and remove the hot juice from the soup a tablespoon, then beat the eggs and continue until we fill a small bowl of soup and egg. Let it boil for another 5-10 minutes. Serve the soup hot, with green parsley, sour cream and hot peppers. GOOD APPETITE!


I took this recipe for meatball soup from Radu Anton Roman's book, "Romanian dishes, wines and customs" and I adapted it to what we have in the pantry.

Meatball soup is a traditional soup in Romania. The most common are beef meatballs but can be made of chicken or fish. The composition is a little different, depending on the type of meat (for example, fish fillets put bread and not rice, but they are just as tasty.

If you make chicken meatballs and use country chicken, I suggest you boil the meat first, then give it to the robot to chop it. And if you have more meat you can also make meatballs for the main course, like those from grandma . Put a garnish of potatoes or rice next to them, together with the sauce, and you will have the first and second course at the table.

Borscht can be added to the soup (for those who prefer it) and it can be served with marinated or fresh hot peppers. Also, by adding whipped cream with an egg you can get a delicious Greek meatball soup.

Finely chop the meat and onion and grate the carrot. In a large bowl put all the ingredients with egg, rice, salt, pepper and parsley and mix until a homogeneous composition is obtained. 1.5-2 cm diameter loops are made

Put a 1.5 liter pot on the stove over low heat

Onions, carrots, bleach, peppers are finely chopped, finely chopped and boiled in water.

Peel a squash, grate it and cut it into 1 cm cubes. Then put them in the pot.

Add the meatballs and cook for another 15-20 minutes until the rice is cooked.

  • 250-300 ml cream with 32% fat
  • juice from half a lemon or a cup (200 ml) of a little borscht
  • lovage
  • parsley
  • salt
  • pepper

Preparation Chicken soup

Prepare the composition for the meatballs.

Chop the chicken and put it in a bowl with two or three tablespoons of well-salted and drained rice, a finely chopped onion, an egg and salt to taste.

Mix well, vigorously, circularly, until the composition is well bound and firm enough to be able to form hairs from it.

White roots (except celery) and carrots (finely chopped) put them in 2-3 tablespoons of oil. Cook just a little, enough to catch the colored oil from the carrot. It helps both the taste and the appearance of the soup.

Before the water starts to boil, soak your hands in cold water and take a little of the meatball composition, form balls and put them in the pot. A ball of meat should be about the size of a small walnut.

When the meatballs rose to the surface of the water and the water boiled, clean the foam formed.

Put the slice of celery now, whole, and take it out at the end.

Let it boil for about 10-15 minutes, then add the finely chopped onion and the diced peppers. Add a tablespoon of salt.

Check when all the vegetables are cooked. If you have chosen to straighten the soup with a little borscht, bring it to the boil and add it now. Boil for 5 minutes.

Add half the finely chopped greens.

Put the cream in a bowl. Take the hot soup and put it over the cream, gradually, bringing it to about the same temperature as the soup. Pour the cream into the soup, adjust the taste of salt and pepper and turn off the heat.

If you do not add the soup with borscht but with lemon juice, add it now, at the end.

Add the rest of the greens and let the soup simmer for 10-15 minutes, then you can serve.

Tripe soup

Put 4.5 liters of water to boil in a large pot. When the water boils, put the beef bones. Froth the soup 3-4 times.

Reduce heat and simmer for at least an hour.

Wash the vegetables well and clean them. Add to soup, cut into quarters. Boil with the bones.

Add the beef belly, finely chopped, after it has been thawed beforehand. Being pre-cooked, it should not be put on from the beginning, along with the bones.

Sprinkle bay leaves and a few peppercorns.

Let it boil, still on low heat, for another 50-60 minutes or until the beef belly is well cooked.

Turn off the heat and remove the beef bones.

Using a strainer, remove the beef belly and boiled vegetables.

The remaining juice is passed twice through a sieve.

Choose from vegetables the belly cut faithfully and put it back in the soup.

Peel the meat, cut it into cubes and add it to the soup.

The boiled vegetables are passed in a blender, and the obtained puree is put back in the soup.

The soup is boiled again until it boils. Peel the garlic and grind it well in a mortar. Pour over it hot polenta with hot juice. Add the sauce to the soup (it can be sifted beforehand).

Mix the 4 eggs with the cream in a bowl. Put over a little hot juice and mix so as not to form lumps. Add a small pinch of hot liquid one at a time, until the bowl is hot. Finally, the mixture is poured into the soup pot, during which time it is quickly mixed with the polish.
